Abstract
The characteristic absorption spectrum and molecular weight distribution of squid skin collagen were tested, and the application functional properties of collagen such as solubility, water retention, wettability, oil absorption, emulsification and emulsion stability, foaming and foam stability were compared. The results show that: (1) The squid skin collagen extracted by three methods (hot water method, acid method and enzymatic method) has maximum absorption at 220nm, and the molecular weight of collagen is about 220ku; (2) hot water method and enzyme method The solubility performance of collagen extracted by the acid method is better than that of acid collagen; (3) The three types of collagen extracted have a certain water retention, which are 0.54%, 0.52% and 0.55% respectively; (4) Hot water method and enzyme method The collagen extracted by the method has good wettability; (5) the three collagens have good oil absorption, which are 2.7, 3.0 and 3.3ml/g respectively; (6) the three collagens have good emulsification and emulsification stability, among which collagen extracted by acid method has the best instant emulsification, but collagen extracted by enzymatic method has the best emulsification stability; (7) 3 types of collagen have good foaming properties and foam stability , among which the foaming property and foam stability of collagen extracted by acid method are the best, 83% and 67% respectively.
