Abstract
Acid-soluble collagen (ASC) and enzyme-soluble collagen (PSC) were extracted and purified from sturgeon skin, and the molecular structure composition and physical and chemical properties of sturgeon skin collagen were measured and analyzed, and compared with those from mammalian sources. A comparative study of bovine Achilles tendon collagen. The results show that the extracted sturgeon skin collagen and bovine Achilles tendon collagen are typical type I collagen; the amino acid composition and protein secondary structure of sturgeon skin collagen ASC and PSC are basically the same, but they are different from bovine Achilles tendon collagen. There is an obvious difference; the physical and chemical property analysis results of collagen show that: the thermal denaturation temperature of sturgeon skin collagen ASC and PSC (28.04, 28.13¡æ) is significantly lower than the denaturation temperature of bovine Achilles tendon collagen (42.81¡æ); in In solution, bovine Achilles tendon collagen is more likely to form intermolecular aggregates and exhibits better resistance to enzymatic degradation than sturgeon skin collagen.
