Abstract
Acid-soluble collagen was extracted and characterized from pollock processing waste. The collagen has maximum UV absorption at 230nm, and the infrared absorption spectrum indicates the existence of a helical structure. The electrophoresis pattern separated multiple subunits and identified them as type I collagen. This collagen has a unique amino acid composition, with 19.8% glycine and 6.9% hydroxyproline. The average molecular weight range of collagen peptides prepared by acid hydrolysis ranges from 3.2kDa to 53kDa. Collagen peptides have different biological functions: higher molecular weight collagen peptides show hemostasis, procoagulation and wound healing functions in mice, while lower molecular weight collagen peptides significantly promote burn repair.
