Effects Of Ultrahigh Pressure Treatment On Thermal Properties Of Collagen In Beef Intramuscular Connective Tissue

Abstract
To explore the effects of ultra-high pressure treatment (different pressures and holding times) on the collagen properties of beef intramuscular connective tissue. Bovine semitendinosus muscles were treated with pressures of 200 to 600 MPa for 10 min and 20 min respectively. The changes in mechanical strength, content and thermal stability of collagen in the connective tissue of beef muscles during ultrahigh pressure treatment were analyzed. The results show that when the processing pressure is higher than 300MPa, the mechanical strength of collagen increases with the increase of processing pressure. As the processing pressure increases, the extractable beef intramuscular connective tissue collagen content increases, and when the processing pressure reaches 600MPa, there is a downward trend. Ultrahigh pressure treatment can make the thermal stability of intramuscular connective tissue collagen more stable. Compared with the control group, the thermal denaturation temperature increased during ultrahigh pressure treatment for 10 minutes and 20 minutes. After ultrahigh pressure treatment, there was a very significant positive correlation between the mechanical strength of connective tissue and collagen content, and between the starting temperature of collagen denaturation and peak temperature, with correlation coefficients of 0.487 and 0.686 respectively.
