Abstract
Using fresh pig skin as raw material, based on the gel characteristics and hydroxyproline content as an indicator, various factors affecting the pepsin enzymatic hydrolysis process were studied, and the enzymatic hydrolysis process was optimized through Box-Behnken design; to remove O2-? ,? The antioxidant function of enzymatic hydrolysis products was studied using OH, H2O2 capacity and DNA damage protection as indicators. The results show that the optimal enzymatic hydrolysis conditions are 0.25% enzyme addition, 1:2 solid-liquid ratio (g/mL), 1.65 h enzymatic hydrolysis time, and 41.15 ¡æ enzymatic hydrolysis temperature. Under these enzymatic hydrolysis conditions, the product removes O2- ? The IC50 value is 20.19 mg/mL; clear? The IC50 value of OH is 6.36 mg/mL; the IC50 value of scavenging H2O2 is 0.65 mg/mL; the IC50 value of protecting against DNA damage is 1.86 mg/mL
