Abstract In order to increase the added value of rabbit industry products, a new raw material collagen product was developed. Rabbit skin was used as raw material and collagen was extracted using enzymatic method. Using the collagen extraction rate as an indicator, the pepsin dosage, enzymatic hydrolysis solution pH and enzymatic hydrolysis time were studied. The influence of three factors on the collagen extraction process determines the optimal extraction conditions for collagen. The results of single factor experiments and orthogonal experiments show that the optimal conditions are the pH value of the enzymatic hydrolyzate solution of 1.9, the enzymatic hydrolysis time of 4 hours, and the dosage of pepsin. 1% (w/w), under these conditions, the extraction rate of collagen was (94.17¡À0.57)%, and the purity was (86.12¡À0.15)%. The results of polyacrylamide gel electrophoresis showed that rabbit skin collagen It is mainly composed of three subunit components, ¦Á, ¦Â and ¦Ã, and is type I collagen. Differential calorimetry scanning results show that the thermal cross-linking temperature of this collagen is 44.59¡ãC and the thermal enthalpy value is 1.386 8 J/g. It has High thermal stability
