Abstract
Abstract In order to study the effect of storage temperature on the structural changes of sea cucumber body wall under high temperature and pressure, the pretreated sea cucumber tissues were stored at constant temperatures at 4, 20, 37, 50 and 60 ¡æ respectively. Through the changes in texture profile analysis (TPA) parameters, moisture status, scanning electron microscopy (SEM) and transmission electron microscopy (TEM) images, the effects of storage temperature on the body wall stability of high-temperature and high-pressure sea cucumbers were studied. Impact. The results showed that microorganisms and endogenous enzymes were completely inactivated during high-temperature and high-pressure heat treatment and remained inactivated during 0 to 30 days of storage. During the high-temperature and high-pressure heat treatment process, the structure of collagen fiber bundles is destroyed, and the triple helix structure of collagen is gradually unwound and degraded. During the storage process, the structures of collagen fiber bundles and collagen are further destroyed and degraded, and the degree of destruction is positively correlated with storage temperature. Therefore, the storage temperature can be reduced to effectively reduce the degree of damage to the tissue structure, thereby extending the shelf life of high-temperature and high-pressure sea cucumber products.
