Determination Of Anticoagulant Activity Of Gelatin Hydrolyzate And Discussion Of Its Mechanism
Keywords
Gelatin, Collagen, Anticoagulant Factors, Bioinformatics
Abstract
Gelatin is hydrolyzed by trypsin, and its enzymatic hydrolysis product has anticoagulant activity. Bioinformatics methods are used, starting from the amino acid sequence of collagen, and using sequence comparison software to compare the relationship between collagen and known anticoagulant factors. The primary structure and secondary structure of the gelatin hydrolyzate were used to find similarities in sequence and structure for similar functions, and to explore the anticoagulant mechanism of gelatin hydrolyzate.
