Abstract
Using laboratory-made decalcified carp scales as raw materials, Alcalase protease is used to hydrolyze them to prepare fish scale collagen peptides. In this process, protein extraction rate and hydroxyproline content were used as indicators, single factor and orthogonal experimental methods were used to optimize enzymatic hydrolysis conditions, and the pretreatment temperature, material-to-liquid ratio, enzymatic hydrolysis temperature, enzyme addition amount, and enzymatic hydrolysis were investigated. Effect of time, etc. on protein extraction rate. The results showed that the pretreatment conditions for fish scale collagen were heating treatment at 121¡ãC for 10 minutes, enzymatic hydrolysis temperature of 60¡ãC, substrate mass fraction of 12%, enzyme addition amount of 0.06AU/g, and enzymatic hydrolysis time of 3 hours. Under optimal process conditions, the protein extraction rate can reach 96.24%
