Abstract
The parameters during ergosterol fermentation were studied. The relationship between dissolved oxygen, our, ph and residual sugar concentration and the biomass and ergosterol content of Saccharomyces cerevisiae were compared, and the intrinsic relationship between these parameters was studied. Research shows that dissolved oxygen can more accurately reflect the growth status of yeast and is a better control parameter in the fermentation process. Controlling dissolved oxygen at about 12% can effectively increase the production of ergosterol per unit volume of fermentation broth.
