Abstract
This study uses carp scales as raw materials to study the similarities and differences between two types of fish scale collagen, ASC (acid solublecollagen) and PSC (pepsin soluble collagen), obtained by acetic acid extraction and pepsin extraction. Through SDS-gel electrophoresis, it can be seen that there is no obvious difference between the two proteins in terms of molecular ¦Á-chain composition, molecular weight, etc., and the peptide profiles of the two proteins after limited enzymatic digestion with proteinase K are also very similar. However, judging from the differential thermal analysis (DSC) spectrum and CD spectrum, there are certain differences in thermal stability between the two. The reason for the difference in thermal stability is related to the role of pepsin in the protein preparation process.
