Abstract
Tilapia skin gelatin hydrolysate (TSGH) was prepared by hydrolyzing tilapia skin collagen. Three peptide components (TSGH-1, TSGH-2 and TSGH-3) were separated and analyzed. The amino acid composition of the peptide components was analyzed. The in vitro antioxidant activity and in vivo anti-aging ability of TSGH-3 were evaluated. The results show that TSGH-3 has low molecular weight and high hydrophobic amino acid content. It is confirmed that TSGH-3 has good in vitro antioxidant activity from the aspects of free radical scavenging and metal chelation. TSGH-3 can significantly increase the total antioxidant capacity, superoxide dismutase and glutathione peroxidase activities in the serum, liver and kidney tissues of aging rats induced by D-galactose, and can significantly reduce propylene glycol aldehyde content. Furthermore, TSGH-3 intake protected liver and kidney indices in rats. Therefore, TSGH-3 has good application potential in antioxidant and anti-aging.
