Abstract
Using carp scales as raw materials, the similarities and differences of fish scale collagen ASC and PSC extracted by acid method and enzymatic method were studied. Through SDS-gel electrophoresis and amino acid analysis, it can be seen that the differences between the two proteins in terms of molecular structure, amino acid composition, etc. The difference is not obvious, and the map after limited enzymatic hydrolysis with proteinase K proves this. However, judging from the differential thermal analysis and the decomposition changes of the protein when heated, there is a certain difference in thermal stability between the two. It is speculated that the gap The reason is related to the action of pepsin during the protein preparation process. The non-helical regions at both ends of collagen are decomposed by the action of enzymes.
