Abstract Enzyme-soluble collagen (PSC) was extracted from carp skin and fish bone as raw materials, and the properties of fish skin PSC and fish bone PSC were compared. The electrophoresis results showed that both fish skin PSC and fish bone PSC belong to type ¢ñ collagen; Among the two types of collagen, the contents of proline and hydroxyproline are lower than that of bovine acid-soluble collagen; the results of viscosity measurement show that the denaturation temperature of fish skin PSC is 28.1¡ãC, and the denaturation temperature of fish bone PSC is 30.0¡ãC; The results of differential thermal analysis show that the thermal stability of fish bone PSC is higher than that of fish skin PSC, which is consistent with the results of amino acid analysis and viscosity analysis; the results of Fourier transform infrared spectroscopy analysis show that the structures of fish skin PSC and fish bone PSC have great differences. similarity
