Abstract
The changes in the mechanical properties, ultramicrostructure, infrared spectrum and X-ray diffraction spectrum of the substrate during the hydrogen peroxide-induced degradation of tilapia skin crude collagen fibers were analyzed. The results show that in the presence of hydrogen peroxide, the puncture resistance of fish skin collagen fibers decreases exponentially with heating time, and its mechanical change pattern can be fitted by the exponential function Y=851.0e-0.001x (R2=0.996). good. Scanning electron microscopy shows that the degradation of fish skin collagen fibers proceeds through three stages: destruction and dissolution of the outer membrane layer of fiber bundles, loosening and breakage of fiber bundles, and unwinding and exposure of microfibers. Through infrared spectrum and X-ray diffraction spectrum detection, it is shown that heating weakens the internal force of collagen molecules, but the undissolved material still maintains the triple helix structure of collagen.
