Abstract
Study the effect of ¦Ã-polyglutamic acid on the self-aggregation kinetics of tilapia skin enzymatically soluble collagen and the microstructure and properties of self-aggregated hydrogels. The results show that in the presence of different contents of ¦Ã-polyglutamic acid, the collagen self-aggregation process still includes a nucleation stage and a growth stage, but ¦Ã-polyglutamic acid can prolong the nucleation time of collagen and reduce the nucleation stage. The rate constant of the growth phase first increases and then decreases. Collagen self-aggregation can form a white hydrogel, which is a three-dimensional fiber network structure after scanning electron microscopy. However, ¦Ã-polyglutamic acid can affect the density of collagen fibers. When ¦Ã-polyglutamic acid is relative to collagen, When the percentage increases to 80%, the network density shows an increasing trend. When it further increases to 100%, the density decreases significantly, and the corresponding gel strength first increases and then weakens. However, ¦Ã-polyglutamic acid did not significantly improve the enzyme resistance and thermal stability of the hydrogel, so the next step of research will be to introduce cross-linking and other technologies to further improve the performance of the hydrogel.
