Abstract
Taking tilapia skin as the research object, the effects of hot water extraction, acid extraction and ultrasonic-assisted enzymatic extraction on the physical and chemical properties of fish skin collagen were analyzed. The results show that the UV spectral absorption characteristic peaks of collagen obtained by the three extraction methods are between 220 and 232 nm; the extraction methods have no significant effect on the content of hydroxyproline and proline, but hot water extraction can significantly increase fish skin collagen. To determine the gel strength of protein, acid extraction can significantly increase the intrinsic viscosity of fish skin collagen; the denaturation temperatures of the three types of fish skin collagen are all around 31¡ãC, and the extraction method has no significant effect on the denaturation temperature; hot water extraction of collagen The isoelectric point (pI 5.9) is lower than that of collagen obtained by other methods (near pI 7)
