Abstract
Study the effects of sodium alginate, chondroitin sulfate, hyaluronic acid and chitosan on the self-aggregation kinetics and post-aggregation microstructure of tilapia skin type ¢ñ collagen. The results show that in the presence of sodium alginate, chondroitin sulfate, hyaluronic acid and chitosan, the collagen self-aggregation process still contains two stages: the nucleation stage and the growth stage, but the kinetics of the two stages are affected by each substance. The parameters have different effects. Sodium alginate, hyaluronic acid and chitosan can all reduce the rate constant in the growth stage, but their effects on the nucleation stage are different. Sodium alginate has no significant effect on the rate constant of the nucleation stage, but as the content increases, it can prolong the nucleation time; chitosan can increase the rate constant of the nucleation stage and shorten the nucleation time; hyaluronic acid has an effect on the nucleation stage. The rate constants and nucleation times of the stages have no significant effect. However, chondroitin sulfate had no significant effect on the nucleation stage and growth stage. Scanning electron microscopy results show that sodium alginate, chondroitin sulfate, and hyaluronic acid tend to aggregate collagen fibers laterally to form fiber bundles, and the order that affects their diameter is chondroitin sulfate > sodium alginate > hyaluronic acid, while chitosan does not.
