Abstract
Ultrahigh pressure and enzymatic hydrolysis were used to treat rainbow trout allergen type I collagen, and the effect on its antigenicity was studied. The results showed that after ultra-high pressure treatment, the antigenicity of type I collagen showed a trend of first decreasing and then increasing with the increase of pressure. When treated with ultra-high pressure at 200 MPa and 25 ¡æ for 10 minutes, the antigenicity of type I collagen decreased by 42.66% at the maximum. %. Comparing the effects of enzymatic hydrolysis by papain, ¦Á-chymotrypsin and trypsin on the antigenicity of type I collagen, the optimal enzymatic hydrolysis conditions were when trypsin was at 45¡ãC, pH 8.0, and the mass ratio of enzyme to substrate was 1:10. , the antigenicity of type I collagen is reduced by 97.69%. The above results show that both ultrahigh pressure and enzymatic hydrolysis can effectively reduce the antigenicity of rainbow trout type I collagen, and enzymatic hydrolysis is more effective. The results of this study provide reference for reducing allergens
