Abstract
Trypsin was used to hydrolyze bone collagen to prepare collagen peptides. Through single factor and response surface experiments, the optimal process conditions for trypsin to hydrolyze collagen were determined using the degree of hydrolysis as an indicator. The results show that the optimal process conditions are pH 6.91, reaction temperature 60¡ãC, enzyme addition amount 200mg/g collagen, substrate level 0.1/61.5 (g/mL), and hydrolysis time 4h; collagen hydrolysis under these conditions The degree reached 29.36%. After enzymatic hydrolysis, the solubility and emulsification of collagen are significantly improved.
