Abstract
Taking the black and white skin of fresh plaice as the research object, acid-soluble collagens (ASC) were extracted from them, and their physical and chemical properties, emulsifying activity and emulsification stability were comparatively studied to obtain plaice skin. Provide certain theoretical basis for its development and utilization. The structural characteristics of black-skinned and white-skinned ASCs were preliminarily studied through Fourier transform infrared spectroscopy (FTIR) technology and scanning electron microscopy (SEM); at the same time, their solubility, rheological properties, The isoelectric point, emulsifying activity index (EAI) and emulsifying stability index (ESI) were studied. FTIR scanning results show that amide A, amide B, amide I, amide II, and amide III are present in both black and white skin ASCs, all of which maintain the integrity of the three-dimensional helical structure of collagen; SEM observation results show that both black and white skin ASCs contain amide A, amide B, amide I, amide II, and amide III. ASC all present a porous network structure and are relatively evenly distributed, indicating that the acid extraction process of collagen basically retains the original spatial network structure of collagen fibers. The EAI and ESI results show that the EAI of black-skinned ASC is significantly lower than that of white-skinned ASC (P<0.05), which are (2.60¡À0.53) and (7.30¡À0.41) m2/g respectively, while the ESI of black-skinned ASC is significantly higher than that of white-skinned ASC. Skin ASC (P£¼0.05), respectively (49.12¡À5.18), (27.56¡À4.91) min. The above results show that there are certain differences in the physical and chemical properties and functional properties of ASC extracted from black skin and white skin.
