Abstract
High-voltage pulsed electric field (PEF) technology was used to extract bovine bone collagen. Through single-factor experiments and Box-Behnken central design method, the optimal process parameters for extracting bovine bone collagen were obtained: substrate mass concentration 1.0¤@g /(100¤@mL), pepsin addition amount of 3%, pH value of 2.5, field strength of 21.98¤@kV/cm, and pulse number of 7. Under these conditions, the soluble protein mass concentration was as high as 16.21¤@mg/mL, which was identified by UV spectroscopy. The extracted sample is pure collagen and does not contain other impurities. ª¥
