Abstract The process conditions for high-pressure-assisted extraction of jellyfish collagen were studied. Taking the collagen yield as an indicator, the optimized process conditions were: material-to-liquid ratio (g:mL) 1:4, high-pressure power 250MPa, high-pressure treatment time 10 min, heat The water treatment temperature is 70¡ãC, and the hot water extraction time is 1.5 h. Under these conditions, the yield of jellyfish collagen is 68.2%. This production process has the advantages of simple operation, short production cycle, good product quality, and environmentally friendly production.
