Abstract
Collagen was extracted using the alkaline protease method using the remaining dried wood frog residue after extracting wood frog oil as raw material. Taking the collagen extraction rate as an indicator, the four factors affecting the pH value of collagen extraction, the amount of enzyme added, the enzymatic hydrolysis temperature and the enzymatic hydrolysis time were studied. Based on the single factor experiment, the response surface analysis method was used to obtain the optimal enzyme. The extraction process conditions were optimized according to actual production: pH 10, enzyme amount 1.5%, enzymatic hydrolysis temperature 50¡ãC, enzymatic hydrolysis time 2.5 hours. Under these process conditions, the extraction rate of collagen from wood frog residues was 55.38%, and the collagen The purity of the protein product is 64.15%
