Abstract
Tilapia skin collagen peptide (tsp-i) was used as the ligand and chelated with zinc sulfate using the hydration system method to prepare a peptide chelated zinc product that can be used in zinc supplements. Optimization of zinc chelation process with tilapia skin collagen peptide using response surface methodology. The results show that the optimal chelation process conditions are: reaction temperature 60¡ãC, ph 5.3, molar ratio of tsp-i to zinc sulfate 2:1, tsp-i concentration 3.4g/100ml water, and reaction time 40 minutes. Under these conditions, the theoretical value of chelation rate is 92.57%, and the actual chelation rate is verified to be 92.17%.
