Abstract
Using horse-faced fish bones as raw materials, modern bioenzyme engineering technology is used to prepare collagen peptide enzymatic hydrolyzate, and then freeze-dried to obtain horse-faced fish bone collagen peptide powder. Using ultraviolet absorption spectrum analysis, the maximum absorption peak of collagen peptides in fish bones is approximately at a wavelength of 220nm, which is consistent with the basic characteristics of peptides. The amino acid automatic analyzer determines the amino acids of fish bone collagen peptide powder, and the hydroxyproline content is approximately 3%. The antioxidant effect of fish bone collagen peptide solution at a mass concentration of 60 mg/mL is equivalent to that of glutathione. At 25 mg/mL, the scavenging rate of ¡¤OH and the scavenging rate of DPPH free radicals are as high as 95.98% and 97.36% respectively.
