Preliminary Study On The Extraction And Properties Of Grass Carp Skin Collagen

Abstract
Some basic chemical components of grass carp skin were determined, the extraction process of grass carp skin collagen using enzymatic method was compared, and the amino acid composition, molecular weight distribution, denaturation temperature, etc. of the grass carp skin collagen were analyzed and measured. The results showed that: It is feasible to extract collagen from grass carp skin by enzymatic method, but the pretreatment of the skin should be strengthened. In the amino acid composition of grass carp skin collagen, the content of sub-amino acids (proline and hydroxyproline) is lower than the content of sub-amino acids in pig skin collagen; differential formula The scanning calorimeter measured the denaturation temperature of grass carp skin collagen at about 20¡ãC; the electrophoresis results showed that most of the proposed collagen maintained its natural triple helix structure, but some collagen may have been denatured.
