Abstract
Using channel catfish bone enzymatic collagen peptide solution and calcium chloride as raw materials, and the chelation rate as an indicator, collagen peptide chelated calcium was prepared under certain conditions, and the temperature, ph, time, and mass ratio of peptide and calcium were examined. The impact of the combination rate. On the basis of the single-factor experimental results, the box-behnken central combination design and response surface analysis method were used to determine the optimal chelation process conditions as temperature 60¡ãC, pH 5.4, time 1.5h, and mass ratio 2:1.
