Abstract
Streptococcus thermophilus is considered a multifunctional probiotic. Neutrase 0.8L, Protease P “Amano” 6, ProteAX, Alcalase 2.4LFG and flavor-neutral protease five kinds of grass carp skin protein hydrolyzate were used as a method for cultivating Streptococcus thermophilus. Nitrogen source, using the proliferation effect of hydrolyzate on Streptococcus thermophilus as the evaluation index, select the best hydrolysis enzyme, and use orthogonal experiments to optimize enzymatic hydrolysis conditions. The results show that among the five microbial proteases, Neutrase 0.8L is the best enzyme to hydrolyze grass carp skin protein. The optimal enzymatic hydrolysis conditions are: 1% enzyme amount, 80 min enzymatic hydrolysis time, initial pH 6.5, feed water Ratio 1:2 (m/V). Grass carp skin protein hydrolyzate rich in collagen peptides prepared by Neutrase 0.8L enzymatic hydrolysis method is an ideal nitrogen source for cultivating Streptococcus thermophilus
