Abstract An orthogonal experiment was used to study the optimization process for extracting collagen from the skin of four freshwater fish species: tilapia, bighead carp, grass carp and crucian carp. At the same time, the eBio Service system was used to analyze the molecular weight and composition of the purified collagen. The experimental results showed that 4 The optimal extraction processes for freshwater fish skin collagen are different. Under the optimal extraction conditions, the collagen extraction rates are 36.57%, 30.58%, 35.14%, and 45.17%; the yield rates are 8.93%, 8.52%, respectively. %, 9.03%, 6.50%.
