Abstract
my country is a major aquatic product processing country, and the fish processing process produces a large amount of fish skin as a by-product. Studies have found that fish skin rich in collagen can be hydrolyzed by protease to obtain small molecule peptides with a variety of physiological functions. Among them, oligopeptides containing 2 to 20 amino acid residues have received widespread attention because of their strong biological activity, high safety, and easy absorption by the human body. It is reported that fish skin collagen oligopeptides can exert various physiological functions such as antioxidant, blood pressure control, chelation of metal ions, and immunity regulation, and show high application potential in functional foods, pharmaceuticals, cosmetics and other fields. This article summarizes the preparation, physiological activity and application research of fish skin collagen oligopeptides reported in domestic and foreign literature in recent years, with a view to providing guidance for the research and development of functional peptide products and the efficient, high-value and sustainable development of my country’s aquatic resources.
