Abstract
The basic components and amino acid composition of four common freshwater fish scales were measured, the process of enzymatic hydrolysis of fish scales to prepare hydrolyzed collagen was studied, and an orthogonal experiment was used to optimize the hydrolysis conditions. The test results showed that freshwater fish scales are mainly composed of protein Composed of ash and ash, the crude protein content is as high as 55%. The amino acid composition shows that freshwater fish scales are rich in hydroxyproline and are a good raw material for preparing hydrolyzed collagen. Orthogonal test results show that 55 ¡æ, E/S 3%, enzymatic hydrolysis The hydrolysis effect is best when the material-to-liquid ratio is 1:10 (that is, the substrate mass concentration is 100 g/L) in 2 h. At this time, the molecular weight of the hydrolyzate is small and the distribution is concentrated.
