Abstract Fish swim bladder is rich in collagen and has high nutritional value. However, the processing and utilization of fish bladder is currently insufficient, resulting in resource waste and environmental pollution. Grass carp swim bladder was used as raw material and DPPH free radical scavenging ability was used as the evaluation index. Through single factor and response surface experiments, Optimize the best process for enzymatic hydrolysis of fish swim bladder collagen to prepare antioxidant active peptides, and study its in vitro antioxidant activity. The results show that the best preparation process for antioxidant active peptides is to use flavor protease as the enzyme preparation, and the enzymatic hydrolysis time is 79.34 minutes. , the material-to-liquid ratio is 3.09: 100 (g: mL), and the enzyme addition amount is 6 343.43 U/g. The DPPH free radical scavenging ability of the swim bladder collagen peptide prepared under these conditions reaches 79.98%. The fish swim bladder collagen peptide scavenges DPPH free radicals. The IC50 of hydroxyl radical and hydroxyl radical are 8.05 mg/mL and 3.54 mg/mL respectively, and have strong reducing power. Therefore, fish swim bladder collagen peptide has strong antioxidant activity, and grass carp swim bladder is a good raw material for preparing antioxidant active peptides.
