Abstract
Acid-soluble collagen (ASC) and pepsin-soluble collagen (PSC) were extracted from deer bones using acid and enzyme extraction methods, and UV scanning, Fourier transform infrared spectroscopy, DSC, SDS-PAGE vertical electrophoresis and amino acid analyzer were used to study The structure, heat shrinkage temperature, relative molecular weight and amino acid composition of deer bone collagen were studied. The results show that: UV scanning analysis shows that ASC and PSC of deer bone have strong absorption at 234nm, which has the characteristics of collagen; infrared spectrum shows that collagen fibers retain a large amount of triple helix structure; DSC measurement shows that ASC and PSC of deer bone have thermal shrinkage The temperatures are 55¡ãC and 58¡ãC respectively. SDS-PAGE electrophoresis showed that collagen contains three different chains, ¦Á1, ¦Á2 and ¦Â chain. Amino acid analysis shows that it has the amino acid composition of a typical collagen
