Abstract
Taking Ujimqin sheep aged 1 to 18 months as the research object, the hydroxyproline method and DSC method were used to study the changes in collagen content, collagen thermal solubility and thermal denaturation in intramuscular connective tissue during their growth. . The results showed that the collagen content and thermal solubility in connective tissue, endomysium and perimysium decreased significantly with increasing age (P £¼ 0.05), and the collagen content and thermal solubility in endomysium were significantly higher. in the perimysium. The thermal denaturation temperature of connective tissue and endomysial collagen gradually increases with age, and the thermal denaturation temperature of perimysial collagen shows a downward trend with age.
