Abstract
The physical and chemical properties of sika deer antler collagen prepared by pepsin method under acidic conditions were studied. Its physical and chemical properties were analyzed through ultraviolet scanning (UV), Fourier transform infrared spectroscopy (FTIR), amino acid composition determination, polyacrylamide gel electrophoresis (SDS-PAGE) and differential calorimetry scanning (DSC). The UV scanning spectrum shows that the collagen is of high purity and has a strong absorption peak at a wavelength of 230nm; the infrared spectrum shows that its main absorption peaks such as amide A, amide B, and amide I bands are consistent with the type I collagen standard and has a triple helix structure; Gel electrophoresis showed that velvet antler collagen contains ¦Á1, ¦Á2 and ¦Â chains, which is consistent with the characteristics of type I collagen; amino acid analysis showed that it has the amino acid composition of typical collagen; differential calorimetry scanning measured its heat shrinkage temperature (ts) to be 84.05¡ãC. Sika deer antler has typical physical and chemical properties of type I collagen
