Abstract
Using fresh pig skin as raw material, collagen peptides were prepared by papain hydrolysis method, and various factors affecting the papain hydrolysis process were studied. By measuring the degree of hydrolysis of pig skin, it was determined that the optimal pH for hydrolyzing pig skin by papain to prepare collagen peptides is 5, the optimal temperature is 60¡ãC, the optimal enzyme amount is 0.9%, and the optimal substrate concentration is 30%. Time 3h. Under these hydrolysis conditions, the degree of hydrolysis reaches 14.91%
