Abstract
Papain hydrolysis was used to extract fish scale collagen, and the effects of enzymatic hydrolysis time, enzymatic hydrolysis temperature, enzyme amount, and pH value on the hydrolysis degree of fish scale protein during the enzymatic hydrolysis process were studied. Through the orthogonal experimental design method, the optimal enzymatic hydrolysis conditions were finally determined to be enzymatic hydrolysis time of 6 hours, enzymatic hydrolysis temperature of 50¡ãC, enzyme amount of 0.20g, and pH of 5.0.
