Abstract
? Using grass carp scales as raw materials, acid-soluble collagen (asc) and enzyme-soluble collagen (pepsin-solublecollagens, psc) were extracted under conditions below the protein denaturation temperature, and the rheological properties of their solutions were systematically studied. Determination. Experimental results show that within the shear rate range selected in the experiment, both asc and psc solutions exhibit pseudoplastic flow behavior of typical non-Newtonian fluids, that is, the viscosity of the solution decreases with the increase of shear rate; under the same concentration conditions, The order of solution viscosity is asc>psc>gelatin; shear rate, temperature, ph value and other factors have a significant impact on the fluid properties of asc and psc solutions; under the condition of 0.6% concentration, asc and psc solutions mainly behave as fluids , basically does not have the elastic behavior of a gel; after thermal denaturation of collagen, its fluid elastic behavior increases and its viscous behavior decreases.
